Ingredients
For the sauce
- 1 tbsp extra virgin olive oil
- 1 onion finely chopped
- 2 sprigs thyme
- 1.2 tsp dried red chilli flakes
- 200 ml chicken stock
- 499 grams canned tomatoes chopped
- 30 grams sun-dried tomatoes chopped
- 2 tbsp tomato purée
For the meatballs
- 1 onion finely chopped
- 1 clove garlic finely chopped
- 250 grams minced pork
- 250 grams minced beef
- 50 grams breadcrumbs
- 199 ml Milk
- 1 1/2 tsp oregano
- 1 tsp Salt
- 1/2 tsp back pepper
- 1 egg beaten
- 3 tbsp olive oil

For the sauce
- Heat the oil and sauté the onion and thyme together for 2 minutes.
- Stir in the stock, chili, tomatoes and sun dried tomatoes.
- Add the tomes puree and salt and pepper to taste.
- Allow to boil and then simmer or seven minutes.
For the meatballs
- Mix the onion, garlic, pork and beef together.
- Soak the breadcrumbs in the milk and fold into the meat.
- Add the oregano, salt and pepper to taste and stir in the egg.
- Shape the meat into small balls and sauté in hot oil for 7 minutes until browned.
- Pour in the tomato sauce and simmer for 7 minutes.
- Pour over the spaghetti and top with the parmesan.
