- 5 slices sandwich bread
- 2 tablespoon unsalted butter
- cup ½grated pecorino
- 4 boneless Chicken Breasts
- salt and pepper to taste
- 1 tablespoon olive oil
- 2 bunches Swiss chard de-stemmed and cut into strips

Method
- In a food processor, pulse bread until coarse. Add the cheese, salt and pepper and pulse again.
- Place the chicken in an oven proof tray and season with salt and pepper. Coat the chicken breasts with the crumbs mixture. Cover with foil and bake for 15-20 minutes in a pre-heated (400 degrees) oven.
- Remove the foil and bake for another 2-3 minutes till the crust is golden.
- In a large pan, cook the chards until tender.
- Serve hot along with the baked chicken.
