One Pot Spicy Thai Noodles Recipe

One such dish is this spicy Thai noodles. This is one dish that has been making dinners exciting in many houses every night. If you are not a big fan of spice, you can keep it low on the sriracha and red pepper flakes.

- 1 packet linguine
- 2 eggs beaten
- teaspoon ½red pepper flakes
- 1 cup mushrooms chopped
- 2 tablespoon olive oil
- 1 Zucchini cut into half circles
- 4 cloves garlic minced
- inch ½fresh grated ginger
- cup ¼soy sauce
- 2 tablespoon brown sugar
- tablespoon ½sriracha sauce
- chopped cilantro
- 3 green onions chopped
- cup ¼chopped peanuts

Method
- Cook pasta according to packet directions, drain and set aside.
- In a bowl, combine soy sauce, brown sugar, ginger and sriracha sauce, mix well and set aside.
- In a large pot, heat olive oil. Add the beaten eggs and red pepper flakes and combine together. Stir till the eggs are scrambled. Set aside.
- In the same pot, add some olive oil and sauté the vegetables till cooked-crisp.
- Lower the heat, add the pasta and eggs and stir them all together. Be careful so as to not break the pasta.
- Pour the mixture over the pasta and mix adding the peanuts, cilantro and green onions.
- Serve hot in bowls.
