Easy Thai Coconut Shrimp And Rice

Ingredients
- 4 cups Jasmine rice
- 1 tbsp Salt
- 3 tbsp sugar
- 1 Pandan leaf
- 1 quart Water
- 1 3/ cup ccoconut milk
- 1/2 cup coconut milk
- 1/4 cup coconut oil
- 2 tbsp Thai curry
- 1 pound shrimps
- 1/8 cup all purpose flour

Instructions
- Wash the rice in cold water.
- In a rice cooker cook the rice along with the water, salt, sugar and pandan leaf.
- Pour the coconut milk into the cooked rice and mix well. Allow the rice to sit.
- In the coconut oil, sauté the shrimp over medium high heat and cook until the shrimps turn orange.
- Add the flour and coconut paste to the shrimp and stir well.
- Cook for three minutes.
- Remove the shrimp from the stove and spoon it over the rice.
- Serve!
