Enid Blyton Jam Tarts Recipe

She has given us adventurous stories, her books being so addictive that they were never easy to put down and the food? Irresistible. So today we’ve picked up Jam Tarts from The Secret Seven and while we take a bite, why not smell the old pages of your childhood favourites and enjoy it with this treat!

Ingredients
- 350 grams plain flour
- 1 tsp Salt
- 3 tsps castor sugar
- 175 grams unsalted butter
- 120 ml chilled water
- 24 tbsp Jam

Instructions
- For this recipe, you can stick to your favourite jam or use different flavours in different tarts.
- To start making the tarts put the flour, salt and sugar in a food processor and process till you get coarse crumbs.
- Keep adding water little by little and keep blending till the dough is nice and round.
- Put the dough in refrigerator for about a half an hour.
- Remove the dough after its chilled and grease the tart trays.
- Roll out the pastry but not too thin or too thick and then cut rounds to put in the tart tins.
- Bake the pastry at 180°C for about ten minutes, remove and add the jam.
- Put the jam-filled pastry back in the oven for another ten minutes, then let it cool on a wire rack before serving.
