Fish Cutlet Recipe
Fish cutlets unlike other cutlets aren’t breaded or batter fried. These are, in fact a sautéed mix of fish fillet and fresh veggies shaped into round cutlets and pan seared to crispy perfection. While we love our cutlets made with a nice flaky filet, you can handpick yours from the fish market. You can even turn up the spice by adding some red chilli powder or chilli flakes to the cutlet mix. Follow this recipe to cook up some delicious fish cutlets.

Ingredients
- 250 g fish fillet
- 1 cup soya granules
- 2 Ginger finely chopped
- 2 Green chilies finely chopped
- 1 medium potato (boiled peeled and mashed)
- 1 tbsp Oil
- pinch aof nutmeg powder
- 2 tsp Fresh coriander finely chopped
- salt to taste
- 1 egg white

Instructions
- Heat 1 tablespoon oil in a non stick pan, add ginger and sauté till light golden.
- Add fish fillets and cook, turning sides, till evenly cooked on both the sides.
- Add green chilies, mix and transfer it into a bowl.
- Add potato, soya granules, nutmeg powder, coriander leaves, salt and egg white and mix well.
- Heat oil in a non-stick pan.
- Divide the mixture into equal portions and shape them into cutlets.
- Shallow fry the cutlets, a few at a time, till golden and crisp on both the sides. Drain on absorbent paper.
- Transfer onto a serving plate and serve hot.
