Game Of Thrones Leek Soup Recipe
A heartwarming leek soup which was unfortunately served at the Red Wedding. However, now that a Stark has taken revenge for that, how about we relish this one as a taste of the North’s victory!

- 3 medium leeks
- 1 medium carrot
- 1 stalk celery
- 1 cup Spring onion greens
- 1 lemon
- 1 liter vegetable stock
- 2 bay leaves

Instructions
- Prepare leeks for cooking by chopping off the dark green part, trimming the pale green part.
- Cut off the root end, slice halfway through the stalk and rinse well with water.
- Slice the leeks into rings.
- In a saucepan, heat butter and add the leeks.
- Cover the saucepan and simmer on a low flame.
- Once the leeks are soft, add chopped celery and carrots to the saucepan.
- Saute lightly and add vegetable stock, bay leaves and the seasoning of salt and pepper.
- Simmer this for 20 minutes till the vegetables are all soft.
- Rinse and chop the spring onion greens and mix with the zest of one lemon.
- Add this to the saucepan and simmer for 2-3 more minutes and squeeze in the lemon juice after turning off the heat.
