Harry Potter Beef And Guinness Stew Recipe

- 6 ounces diced bacon
- 2 pounds beef chuck
- 3 tbsp all purpose flour
- 2 medium chopped onions
- 3 cloves garlic
- 4 medium diced potatoes
- 2 large Chopped Carrots
- 2 stalks chopped celery
- 1 pint bottle Guinness Extra Stout
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 1/4 cup tomato paste
- 1 tbsp dried and ground porcini mushrooms
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 1/2 tsp Salt
- 1/4 tsp ground black pepper
- 2 bay leaves
- Salt to taste

Instructions
- Chop the beef into one inch pieces and add sprinkle the salt, pepper and flour.
- Coat the beef well and keep aside.
- In a heavy pot, fry the bacon and after scooping out the bacon, leave the drippings in the pan.
- Brown the beef on all sides and remove it from the pan.
- Fry the onions till they develop a light brown colour.
- Add all the vegetables and cook for about five minutes.
- Now add the Guinness and bring to the boil, scraping the browned bits on the pan.
- Keep boiling for two whole minutes and then add the cooked beef and bacon to the pan.
- Give it a good stir, bring to a boil and turn the heat on low.
- Cover the pot and simmer for about two hours.
- You can add more salt and pepper according to taste.
