Instructions
In a large mixing bowl add the two cups of flour, yeast, sugar and salt.
Whisk the ingredients together and in another bowl mix water and milk.
Add the milk and water mixture to the flour mixture and form a thick batter.
Keep the bowl covered with a cloth or a towel in a warm place for about an hour.
Preheat the oven to 150°F and meanwhile spray a skillet with cooking spray and keep it on a medium low flame.
Put the moulds into it and let them heat up.
Add the batter to the molds, halfway through and let the crumpets cook till you see tiny popped bubbles on top.
Remove the molds from the pan and unmould the crumpets.
Put the crumpets back into the mould upside down and cook the other side for about two minutes.
While cooking the second batch you can keep the cooked crumpets in the pre-heated oven so that they stay warm.
