The Kite Runner Vegetable Shorwa Recipe
An Afghani soup which is usually made with meat but the Wahid’s family makes the vegetarian version for Amir as they can’t afford meat. Turns out this tastes delicious and you should definitely try it out!

Ingredients
- 3 tbsp corn oil
- 2 chopped onions
- 1/2 tbsp Salt adjust according to taste
- 4 cups Water
- 2 diced potatoes
- 2 diced carrots
- 2 sliced celery
- 1/4 tbsp pepper adjust according to taste
- 1/4 tbsp cinnamon
- 1 egg
- 2 tbsp chopped parsley

Instructions
- Heat the corn oil and saute the onions along with salt for two minutes.
- Now add the remaining vegetables except parsley along with water, pepper and cinnamon.
- Bring the water to a boil and simmer it on low heat for half an hour.
- Once the soup thickens, beat an egg and mix it in with the soup.
- As the egg is cooked, turn of the heat and serve the hot soup garnished with parsley.
