Kolkata Style Chicken Roll Recipe

A bite of that flaky roll takes us to a place that we always cherish. With this recipe, we are trying to capture the same element of joy right in our kitchen. It’s simple, has basic ingredients and is best served in multiples.

Instructions
Cooking the chicken
  1. Wash the chicken pieces and marinate it with yogurt, black pepper powder and ginger-garlic paste. Set aside for a minimum of 1 hour
  2. Heat oil in a pan
  3. Add the sliced onions and saute on medium heat until it forms a golden colour
  4. Add the tomatoes and green chilies and saute for 1 minutes
  5. Add the rest of the ingredients except for garam masala
  6. Mix and cook for atleast 2-3 minutes
  7. Add the chicken pieces to the mixture.
  8. Mix it well so it incorporates with the mixture. Cover and cook on low heat for approximately 10 minutes. Keep stirring in regular intervals
  9. Add 1/2 cup of water and let it keep cooking
  10. When the chicken is cooked, remove from heat and top it with garam masala and mix.
  11. Set aside the chicken
Making the paratha
  1. In a large bowl, add the maida flour, oil and salt.
  2. Add water slowly and start kneading with your fingers until it forms a smooth dough. Make 3-4 dough balls.
  3. On a oiled surface, roll out each ball into a round paratha
  4. Heat a frying pan, add oil and cook the paratha until it forms a light brown flaky crust
Making the roll
  1. Place the paratha on a flat surface and arrange the cooked chicken in the middle
  2. Add some lemon juice, ketchup, coriander leaves and some sliced onions
  3. Roll the paratha and serve hot
