Matki Amti Recipe
A hardcore Marathi staple, the Matki Amti is a curry dish with sprouts as the main ingredient. We’ve seen how to make a sprouts korma and this one is similar only lighter and made with sprouted moth beans (matki) instead of green gram. The dish comprises of boiled sprouts immersed in a mildly spiced (with Goda Masala) somewhat watery curry.
The final result is a dish that can be had with roti or even rice. To step up the flavor game, you could temper your matki amti with mustard seeds, green chili and curry leaves. Alternatively, you could add the same while making the amti. Here’s the recipe.

Ingredients
- 1 cup sprouted matki moth beans
- 1 large onion
- 1 green chili
- cup ¼tamarind juice extract
- 2 ” jaggery piece
- Water
- salt to taste
- 2 tsp Oil
- tsp ¼asafetida
- tsp ½mustard
- 1 tsp Goda Kala masala
- teaspoon ½turmeric
- teaspoon ½red chili powder
- A handful of curry leaves
- Chopped Cilantro for garnish

Instructions
- Heat a pressure cooker.
- Add oil and crackle the mustard, slit green chili, asafetida and onions.
- Add the turmeric, red chili powder, and the goda masala and matki.
- Top up with water, according to preferred consistency. Close the lid and allow just one whistle.
- Open the lid. Once cooled, add the salt, tamarind juice and jaggery and bring to a boil.
- Garnish with fresh chopped cilantro and serve.

Additional time will be required to sprout the beans.
