Moby Dick Clam And Cod Chowder Recipe

Ingredients
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 1/2 pounds potatoes peeled and halved
- 2 large leeks finely chopped
- 4 celery stalks finely chopped
- 4 sprigs thyme
- salt and pepper
- 1/2 cup dry white wine
- 4 cups fish stock
- 2 cups heavy cream
- 4 pounds little neck clams scrubbed
- 2 pounds skinless cod roughly chopped

Instructions
- Heat the oil and butter together.
- Add the potatoes, leeks, celery and thyme and sauté.
- Add the salt and pepper and stir for five minutes.
- Add the wine and allow to come to boil. Cook until halved.
- Add the stock and cream and add the salt and pepper and bring to a simmer.
- Simmer for 60 minutes.
- Add the clams and stir for 10 minutes.
- Season the cod and add to the pot.
- Simmer for five minutes and serve.
