Mushy Zucchini Recipe

Ingredients
- 1 stick butter
- 4 cloves of garlic peeled and very finely chopped
- 2 pounds Zucchini topped and tailed, then sliced into rounds ⅓ inch thick
- sea salt and black pepper

Instructions
- On a gentle heat, melt the butter and sweat the garlic (making sure it does not brown or burn). Add the zucchini, season carefully, and toss in the garlicky butter. Cover and continue the gentle cooking, stirring occasionally. After 15 minutes uncover. When some of the zucchini slices start to break, binding the whole together, check the seasoning, and serve.
