Croquettes have a history dating back to the 1691. Although there has been several variations of croquettes among different cuisines, the essential croquettes recipe comes from Spain. The Spanish version contains prawns cooked in a bechamel sauce and deep fried for that flavourful goodness.
This recipe takes a page out of the Spanish recipe book with some twists to give you an authentic taste of Spanish Croquettas. It is the perfect snack for any time of the day. After all, it contains the flavours of the sea.

Instructions
Add the butter to a medium saucepan and stir it until it melts
Add the flour while continuing to stir
Let the flour cook in the butter for a few minutes while continuing to stir
Add the cold milk slowly and keep stirring until it forms a smooth sauce
Add the prawns to this mixture and season with salt and pepper to taste
Add the tomato puree and continue to stir
Let the prawn mixture cook for 7-8 minutes and then remove from heat
Make sure to cool this mixture completely, preferably kept overnight
After it cools, scoop a tablespoon of the thickened mixture and form into round balls
Dip the balls into the breadcrumbs first, the beaten egg next and another layer of breadcrumbs
Heat oil for deep frying and drop the balls into the deep fryer
Cook the balls in batches until the it turns golden brown
Remove from the deep fryer and serve immediately
