Ragda Patties Recipe
Now that we know how to make that perfect ragda, lets see how to make the most famous ragda dish ever, as well. Yes, I’m talking of the mouthwatering ragda patties. A snack that traces its origin back to the dream-filled streets of Mumbai (then Bombay). Practically, the ragda patties (or ragda pattice) is sumptuous enough to fill in as an entire meal but still is more famous as a street snack.
Ragda patties comprise of the spiced ragda and patties made of mashed boiled potatoes. Here’s the recipe for the ragda, and you can make the patties using the following recipe.

Instructions
Making the patties
- Boil, peel and grate the potatoes.
- Add the cornflour and salt and knead into a soft dough.
- Divide into 12 equal portions and keep aside.
- Ball each portion roughly using your hands and press lightly on the top to make a patty. Repeat to make the remaining 11 patties.
- Shallow fry on a non-stick pan till the patties are golden brown and crisp.
How to plate
- For serving, place 2 patties on a plate and pour the ragda over.
- Top with roughly 4-5 tablespoons of each chutney. Sprinkle the sev and onions on top.
- Serve immediately.
