Roasted Garlic Cauliflower Recipe

Made using signature Italian flavours but with a hint of coconut, the dish uses little oil and can even be baked instead of roasting on a skillet – as done in the recipe below. - 5 cups cauliflower florets
- 1/4 cup coconut oil
- 4 garlic cloves minced
- 1/4 cup fresh parsley leaves chopped
- 2 tbsp Parmesan cheese grated
- salt and pepper to taste

Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Take the cauliflower florets in a bowl, add coconut oil and garlic, and season with salt and pepper to taste. Gently toss to combine. Spread out the mixed on the oiled baking tray. Place into oven and bake for 12-14 minutes, or until tender and golden brown. Serve immediately, sprinkled with Parmesan and parsley.
