Vegetable Stew Recipe

Ingredients
- 2 carrots peeled and chopped
- 2 potatoes peeled and chopped
- cup ¾peas
- 80 gms French beans
- 1 onion thinly sliced
- 4 garlic cloves crushed
- 1 inch Ginger julienned
- 3 Green chilies slit
- 1 inch ½cinnamon
- 5 Cloves
- 1 tsp black pepper
- 4 green cardamoms
- 2 cups ½thin coconut water
- 1 cup thick coconut milk
- 12 Curry Leaves
- 3 tbsp coconut oil
- salt as required

Instructions
- Heat the coconut oil and fry the whole and crushed spices.
- Sauté until fragrant.
- Add the garlic, green chillies, ginger, curry leaves and sliced onions and fry until the onions become translucent.
- Stir in the chopped vegetables and sauté for a minute.
- Ass the coconut water and cover the pan for two minutes to allow the vegetables to cook.
- Stir in the coconut milk and simmer for half a minute.
- Serve!
Recipe Notes
This stew tastes great with steamed rice or appams.
