Wind In The Willows Bubble And Squeak Recipe
Wind In The Willows is a childhood classic that many adults still love for its moral lessons and colorful characters. In the story, we are introduced to a variety of animal characters; Mole, who abhors spring cleaning, Rat, who lives near the river and Toad, a rich, flighty character who goes from obsession to obsession.
Through the story, Toad develops an obsession with motorcars and gets caught by the police for reckless driving. He’s thrown into jail for a twenty year sentence and becomes friends with a galore’s daughter, who brings him a plate of bubble and squeak:
“‘Now, cheer up, Toad,’ she said, coaxingly, on entering, ‘and sit up and dry your eyes and be a sensible animal. And do try and eat a bit of dinner. See, I’ve brought you some of mine, hot from the oven!’
It was bubble-and-squeak, between two plates, and its fragrance filled the narrow cell.”
Bubble and Squeak
Bubble and squeak is a funny name for a dish, isn’t it? It’s named after the sound of cabbage (which is a common ingredient) bubbling while being cooked.
Bubble and squeak is a traditional English dish made by shallow frying leftover vegetables from a roast. The dish was popular during World War II, when food was being rationed and leftovers were necessary to consume.
Any leftover roast vegetables can be used in the dish – they are fried with cold chopped meat and mashed potatoes.
Serve this bubble and squeak as a part of a Full English Breakfast, or have it as a light lunch.

- 1 tbsp butter
- 2 tbsp canola oil
- 1/2 medium onion finely chopped
- 1/2 cup cooked cabbage
- 1/2 cup carrots grated
- 2 cups mashed potatoes
- salt to taste
- pepper to taste
Ingredients

- Sauté the onion in the butter and oil for five minutes.
- Stir in the carrots and cabbage.
- Season with salt and pepper.
- Toss for five minutes.
- Stir in the mashed potatoes and, using a spoon, shaped the mixture into rough patties.
- Press the patty down into the pan until it starts making squeaking sounds.
- Flip the patty and cook the other side for five minutes.
- Take out of the skillet and serve.
