Relish Flavours Of The West Coast At This Amazing Food Pop Up In Mumbai
India has a myriad of flavours throughout is extent and there is always something new to try and explore. According to a report by the Mid-Day, a food pop up is being organised on Saturday to give the city of Mumbai a taste of all the that’s good on the west coast of India.
Different Flavours On A Plate
This pop up which has been created by Chef Raji Gupta is happening on 24th Feb at 7 PM at The Little House in Versova. Chef Gupta belongs to Karnataka and has got her cooking expertise from her mother and relatives. “Ingredients such as kokum, coconut, cumin and chillies find their way to the kitchen of various communities. But it is the subtle changes like using dry or sautéed coconut instead of fresh ones, or the addition of some local ingredients such as triphala in a Goan bangda fish curry that makes the difference,” says Gupta as she talks to Mid-Day.
The menu of the pop up will include Bombil Fry in Malvani Masala, Mangalorean Mackarel Curry, Saraswat Tisrya Masala, Dakshin Black Pepper Chicken, Kerala Style Avial, Akki Rotti, Mavinakayi Uppinakayi, Rice Papadum Khamang Kakdi And Solkadi. Chef Gupta talks about the curry and says, “I will use the Byadagi chilli, which my father sources from Karnataka, although you will find it in the city too. The use of chillies from different regions also adds a local flavour.”
She further elaborates about the Saraswat Tisrya Masala and says, “This dish includes spices such as coriander seed powder, clove, ginger, mustard, cumin and garam masala, which are typical to the the Saraswat cuisine. The addition of freshly grated coconut adds the sweetness.” She tells the publication about the chicken dish and says, “The fennel and cumin balance the heat of the pepper. It can be a gravy or a dry dish.”
