Slow Cooker Chicken Parmesan Soup Recipe

Ingredients
- 3 garlic cloves minced
- 1 green bell pepper chopped
- 1 can crushed tomatoes 14.5 ounces
- 1/2 pound boneless skinless chicken breasts, raw
- 3 cups chicken broth plus additional if needed
- 1/2 cup chopped white onion
- 1/2 cup shredded Parmesan cheese plus extra for garnish
- 1 tablespoon chopped fresh basil
- 2 teaspoons chopped fresh oregano
- 1/8 teaspoon red pepper flakes more if you prefer spicy food
- 4 ounces uncooked penne pasta
- Chopped fresh basil or parsley for garnish

Instructions
- In your slow cooker, add garlic, bell pepper, crushed tomatoes, chicken, broth, onion, one third cup cheese, basil, oregano and red pepper flakes.
- Stir well and cook on high flame for three and half hours. on low flame for 7 hours
- Remove the chicken breasts and shred.
- Add them back to slow cooker.S
- Add the pasta and stir well. Cook on high flame for 30 minutes, until the pasta is cooked.
- If the soup becomes too thick after the pasta is cooked, add additional broth.
- Serve garnished with extra Parmesan cheese and chopped basil or parsley.
