Warm Thai Chicken Salad

Ingredients
- 2 large skinless chicken breasts
- 175 g egg noodles
- 2 handfuls of Chinese leaves shredded
- 2 carrots thinly sliced
- 8 Spring onions finely sliced
- 1 red pepper seeded and finely sliced
- 1 handful of fresh coriander leaves
For the dressing
- 1 red chili seeded and chopped
- 2 garlic cloves finely chopped
- 1 tbsp root ginger finely chopped
- 2 tbsp soy sauce
- 1 lime juiced
- 2 tbsp olive oil
- 2 tbsp Water

Instructions
- Preheat a grill to high and then grill the chicken for 10 minutes until cooked.
- Cook the noodles and drain.
- Toss the vegetables together and slice the chicken and toss it with the vegetables.
- Add the noodles and coriander leaves and toss again.
- Whisk the dressing ingredients together and pour it over the salad.
- Toss to combine and serve!
