Jambalaya (On The Bayou) Jambalaya Recipe
In our ongoing series of recipes inspired by popular culture, we’ve been focusing on dishes inspired by books and movies. Today, we turn the focus to songs. There have been countless songs which celebrate the love of food; head here for a collection of songs which will have you dancing to the kitchen.
One of our favourite food songs is Jambalya (On The Bayou) by Hank Lewis.
Jambalaya, Crawfish Pie, Fille Gumbo
The song is named for jambalaya, a Creole and Cajun dish. In the song, the singer celebrates how he’s going to go for a party with his girlfriend and family.
He anticipates the food they’ll eat including Jambalya, crawfish pie and file gumbo.
To channel some Creole exuberance yourself, make a big bowl of Jambalaya and enjoy for lunch or dinner.

Ingredients
- 2 tbsp peanut oil
- 1 tbsp Cajun seasoning
- 10 ounces Andouille sausage sliced into rounds
- 1 pound boneless skinless chicken, cut into cubes
- 1 onion diced
- 1 small green pepper diced
- 3 cloves garlic minced
- 1 can Italian tomatoes
- 1/2 tsp red pepper flakes
- 1/2 tso ground black pepper
- 1 tsp Salt
- 1/2 tsp hot pepper sauce
- 2 tbsp Worcestshire sauce
- 1 1/4 cups uncooked white recipe
- 2 1/2 cups chicken broth

Instructions
- Heat a teaspoon of the peanut oil.
- Keeping the two proteins separate, toss the sausage and chicken in the Cajun seasoning.
- Sauté the sausage in the oil until browned.
- Remove with a spoon and set aside.
- In the remaining peanut oil sauté the chicken pieces.
- Sauté the onion, bell pepper, celery and garlic in the same oil.
- Add the red pepper, black pepper, salt, hot pepper sauce, Worsterchire sauce and stir well.
- Add the chicken and sausage.
- Sauté for ten minutes.
- Add the rice and chicken broth.
- Bring to a boil, reduce the heat and simmer for 20 minutes.
