Ingredients
- 1 lb linguine or other pasta
- 2 tablespoons olive oil divided
- 1 tablespoon butter
- 4 garlic cloves minced
- 1 cup ⁄2seasoned breadcrumbs
- 4 eggs
- 1 cup ⁄4milk
- 1 cup ⁄2parmesan cheese shredded, plus more to garnish (optional)
- salt and pepper
- 1 cup ⁄4fresh parsley chopped, garnish

Instructions
- In a saucepan, add water and salt. Boil the pasta in the salted water for one minute.
- Separately, in a large skillet add one tablespoon of oil and the butter over medium heat.
- Add the garlic and the bread crumbs. Stir occasionally. Let it cook for about 5 minutes
- Remove the mixture and set aside.
- In a bowl add eggs milk and parmesan cheese. Mix well
- In a pan add one tablespoon of olive oil
- Add the drained pasta(do not rinse) to the frying pan
- Stir and then add the egg mixture.
- Stir well until the eggs are cooked.
- Add the breadcrumb mixture and stir well.
- Add salt and pepper to taste.
- Serve hot and garnish with parmesan cheese.
