Chef Tostones With Chile Vinegar
Jon Favreau’s Chef is being recreated as a Bollywood version that stars Saif Ali Khan. While many fans are on the edge waiting for the release, we’re frying up tostones from the original as we wait.

- 1 large green plaintain
- 2 cups rice vinegar
- 1/4 cup garlic
- 2 cups red jalapenos
- 6 Thai chilies
- Oil for deep frying
- Salt for seasoning

Instructions
- Cut the plaintain into 1/4 inch slices and season them with salt.
- Heat oil in a deep pan and fry the plaintains till crispy and golden.
- Bring them out, smash them and fry again till you get a colour a little beyond golden and remove.
- Add rice vinegar, garlic, red jalapenos and Thai chilies in a blender and blitz them to make the chile vinegar.
