Chivda or poha chivda is a Maharashtrian savory snack. It consists of fried or roasted puffed rice mildly spiced and flavored with curry leaves and coconut. The poha or aval is mixed with other pulses such as peanuts, cashews and gram to give a salty and crunchy snack that goes beautifully with evening tea.

A healthier version of the chivda, which is roasted instead of fried, is an excellent snack to munch on when you’re watching your weight. Here’s the recipe for the roasted (healthy) and fried chivda.chivda-mochacake-2B014

Instructions
  1. Keep one-third of the poha in a separate bowl.
  2. Heat 1½ oil in a deep fry pan,
  3. Fry the poha in batches, constantly stirring. When the poha puff up, remove from the pan to a kitchen towel and drain excess oil.
  4. Add crushed cumin, chili powder, turmeric, and salt to the fried poha.
  5. Heat 2 tablespoons oil in a pan and fry the garlic, curry leaves, coconut shreds and chilies till golden. Add the roasted gram in the end turn off the stove.
  6. Add the fried mix to the poha along with the peanuts and toss well.
  7. Cool completely and store in an airtight container.
  8. Enjoy with evening tea or coffee.
Recipe Notes

For a healthier option, dry roast the poha instead of frying it. Temper the roasted poha with the same spices and ingredients mentioned above.
