Masala Biscuit Recipe
Cookies are an excellent way to snack with or without a beverage to wash them down with. And while cookies and biscuits may mostly be condiments of the Western Hemisphere, Indian bakeries and chai tapris (street side tea stalls) too have a spicy version of the baked goodie – masala biscuits.
Masala Biscuits are like your regular cookies and biscuits, only with the added zest of whole and ground spices that give the biscuit an added saltiness and flavour. These biscuits are best enjoyed with some piping hot chai or filter coffee. Follow the simple recipe below bake a batch of delicious masala biscuits at home!

Ingredients
- 2 cups all purpose flour maida
- cup ¾butter/ghee
- 1 tsp chily powder
- 1 Ginger
- 1 tsp Cumin seeds
- 2 dry red chilies
- tsp ½baking soda
- 2 tsp sugar
- pinch aof Asafetida
- A handful of curry leaves
- salt to taste

Instructions
- Mix all the above ingredients together in a bowl to get a soft. Add a little curd if the dough is not moist enough.
- Grease an aluminum foil and roll out the dough into a big circle, approximately 1" thick.
- Using a cookie cutter, cut out into desired shapes.
- Place on a greased baking dish and bake for 15 - 20 minutes in an oven preheated to 325 degrees F.
- Cool and store in airtight containers.
- Enjoy with tea.
