Onion Poha Recipe

If you’ve ever had a Marathi relative, friend or cook, you’d know what a poha is. And in all possibility are already imagining a plate of it topped with some peanuts and coriander chutney. The dish is a popular breakfast item made with flattened rice, vegetables and mild spices.
The onion poha or kanda poha is a variation of the classic poha with added onions to step up the taste, crunch and awesomeness of this preparation. Follow the uber easy recipe for delicious and healthy poha in minutes.

Ingredients
- 1½ cup Poha flattened rice
- 1 onion chopped
- 2 potatoes (boiled and chopped optional)
- 1 tsp Mustard seeds
- 2 tbsp Peanuts
- A handful of curry leaves
- 1 green chili chopped
- ¼ tsp Turmeric powder
- 1½ tbsp Oil
- Salt to taste

Instructions
- Rinse the poha to soften it to a mashable state.
- Add salt and turmeric powder. Mix well.
- Dry roast the peanuts to make them crunchier. Keep aside.
- Heat oil in a pan and crackle the mustard seeds.
- Then add the potato and onions and sauté till the onions become translucent.
- Now add the curry leaves and sauté for roughly half a minute.
- Add the roasted peanuts and poha and stir. Cover and cook on a low flame for 2-3 minutes, stirring once or twice in between.
- Turn off the stove and let the poha sit for about a minute. Stir.
- Remove the lid and garnish with lime juice and coriander leaves.
- Stir and serve hot.
